Cake


Anybody else a little more than a little excited for the return of the Great British Baking Show? It might just be us (but I’m ok with that!).

There’s just something about watching a bunch of friendly people bake delicious things that

makes the world seem a little brighter. Eric and I tend to be TV bingers, to the point where we won’t even start a show if it’s not yet completely released - but not so in this case. We savor our individually released episodes and look forward to their Friday viewing all week long. This year continues to be a real butt-kicker in the emotional department and we’ve needed some cheering the past few weeks - so the season has arrived at the perfect time.

This year I have also lifted my usual sugar restrictions and we’re going to (try to!) make our own thematic bake each week, just to add a little extra something to keep us going. Week one, last Friday, was cake week - so we decided to made cheesecake. Cheating? Maybe. But we like what we like (and I’m not sorry about it).

We made these bad boys using a scaled down version of my Dad’s super secret recipe (that he guards fiercely at all times), adapted for these mini pans and baked in the Instant Pot. They tasted like the holidays to me, and celebration - and definitely supplied the spiritual lift I was needing.

The theme for this upcoming week is biscuits…aka cookies…so we’re thinking shortbread. But who knows what might come out of the oven on Friday!


As of yesterday, all of my course videos have been uploaded to the new site. I’ve still got formatting to do and notes to add and a lot of prettying up to finish - but after all this time…six months of dedicated work…ugh, so close! I’m trying to keep myself working at my slow and sustainable plod, but it’s hard to keep myself from sitting down and working till I drop to get it done. Slow and steady is the name of the game. Emphasis on the slow.

I did have a moment last week, though, where I just needed to finish something. I just NEEDED to see one of my long-term projects come to a close. So, one evening, I grabbed my handspun yard and knitted up a little hat.

There was no pattern, no real idea of what it might look like - I just picked up some needles and got to it. And this was the result! I used up all but a little ball of the yarn and got a sweet little hat out of the deal, after all those hours and all that time. Sometimes (usually!) patience pays off.
